Course Description:

In this course, you’ll learn the role of nutrition, social determinants, and health equity in the presence of COVID-19; examine the prehabilitation model and the role nutrition plays in optimizing functional and clinical outcomes in specialized populations; and identify challenges for COVID-19 patients with chronic conditions. Originally presented at FNCE 2021 on October 16, 2021.

Cordialis Msora-Kasago is the Founder of The African Pot Nutrition, a nutrition consultancy that improves the health of people of African descent through diet and lifestyle changes. She is also a Regional Nutrition Manager for Sodexo, a role in which she develops innovative programs and supports clinical nutrition functions for hospitals across the Western United States. This role allows her to help dietitians improve care, not only within the walls of the hospitals but also outside, through effective community facing initiatives. Cordialis is a National Media Spokesperson for The Academy of Nutrition and Dietetics and a contributing nutrition expert for a wide variety of media and magazines including Food & Nutrition Magazine and healthline.com. She is a graduate of the California State University, Los Angeles’ Nutritional Sciences program and holds a Master’s of Arts in African Area Studies with an emphasis on Public Health.

Chelsia Gillis, MSc, PhD, RD, CNSC

Dr Chelsia Gillis is a registered dietitian. She has expertise in surgical metabolism, surgical nutrition, Prehabilitation, Enhanced Recovery After Surgery, epidemiology, and patient engagement. She received her PhD in epidemiology from the University of Calgary and is currently completing a postdoctoral fellowship at McGill University in Montreal, Quebec. Dr Gillis has been a collaborator and principal investigator for several Canadian dietetic and nutrition research trials. Her current research includes collaboration to understand which factors influence functional capacity in personalized Prehabilitation for older patients scheduled for colorectal cancer surgery with malnutrition and/or low physical performance. Additionally, Dr Gillis has authored/coauthored many articles in peer-reviewed journals.

Dr Alexandro Ricardo Zarruk has been practicing medicine in Montreal, Canada since 2012. He is associated with the Lakeshore General Hospital. He was trained in internal medicine at Boston University and then completed his training at the University of Ottawa.
