Course Objectives:

  • Determine a malnutrition diagnosis utilizing the Academy/A.S.P.E.N. clinical characteristics.
  • Assess at least one muscle site for signs of malnutrition and demonstrate the use of a grip strength dynamometer.
  • Develop a nutrition care plan, recommending appropriate nutrition interventions for the malnourished patient.
  • Describe one functional measure for demonstrating improved nutritional status during follow-up.

Allison Steiber has been a Registered Dietitian since 1995 having worked as a clinical renal dietitian. She has published numerous articles and presented at several national and regional healthcare meetings on hemodialysis and renal dietetics. As faculty at Case Western Reserve, she has been the Director of Dietetic Internship programs. With a joint appointment as Chief Science Officer at the Academy of Nutrition and Dietetics she is overseeing technologic advances in Nutrition and Dietetics including the malnourished patient virtual training platform and content to educate dietitians on nutrition-focused physical assessment techniques.

He is currently working as a clinical dietitian in the Outpatient Clinic and on Home-Based Services in the Louis Stokes Veterans Affairs Medical Centre. Grissim has also worked as a Research Coordinator on hemodialysis and rental nutrition. He co-developed the virtual platform at Case Western University to educate dietitians on nutrition-focused physical assessment techniques.
