Kathleen Eustace, MPH, RD, LD, is a Registered Dietitian current on faculty with the Department of Clinical Nutrition at UT Southwestern educating in the Masters of Clinical Nutrition and dietetic internship program. She received a BS in Nutrition and Dietetics in 2008 from Stephen F Austin State University, then went on to complete her Master’s in Public Health and a dietetic internship at UT Health Science Center in Houston in 2010. She has worked in a variety of settings; however, her area of expertise has focused on nutrition support and diet counseling in GI and liver disease with emphasis in IBD. She worked for several years in the UT Southwestern Digestive and Liver disease clinic before transitioning to Children’s Health where she continued to focus on GI and Liver disease patients. Currently, she supports patients part time at UT Southwestern along with her educational responsibilities. She is an advocate for personalizing nutrition to the support the individual, sustainable changes, disease management, and positively impacting the overall quality of life for the individual. As a continual learner, she focuses her practice on the latest research and information in a dynamic environment.

Dr. Teresa Johnson is a Registered Dietitian with over 30 years of clinical practice and teaching experience. She has a BS in Dietetics from the University of Montevallo, a master’s in nutrition from Auburn University and a Doctorate in Clinical nutrition from Rutgers University. Her current clinical practice is outpatient pediatric clinics for Children’s Rehabilitation Services and pool dietitian for Encompass Health. She teaches Human Nutrition, Nutrition Assessment, Nutrition for the Lifecycle, Complementary and Alternative Medicine, Introduction to Food Science, Community Nutrition, and Sports Nutrition and Metabolism.

Caroline is a pediatric Registered Dietitian who has a passion for educating families on how to provide nourishing meals from the beginning of life. She is a postpartum nutrition and child feeding expert. Caroline is a clinician and works with families of children who have chronic medical conditions such as GI disorders and cystic fibrosis.
